That's a very good question, but I think it's really the bonds of those in the Prequel Trilogy that really get to me the most. Qui-Gon and Obi-Wan, for example, Obi-Wan and Padme, Obi-Wan and Anakin -- Obi-Wan and Anakin especially, because of how complex it really is. For all they argue, they really do love one another, in the end, even if neither of them was really adept at expressing it in the end. I know that things like their goodbye in REVENGE OF THE SITH that really get to me (especially considering that it's really their last goodbye in that movie, and Obi-Wan acknowledging that yes, he really is proud of Anakin. *), as well as their duel on Mustafar. Especially Obi-Wan's, "You were my brother, Anakin! I loved you!" I might not necessarily like how he left Anakin there like that **, but I'm not going to deny that that was heartbreaking. I also loved their moment of laughing in the turbolift in ATTACK OF THE CLONES, and the chase through Coruscant, as well as their first meeting in THE PHANTOM MENACE, and later, Obi-Wan comforting Anakin about Qui-Gon's death and promising that no matter what happens, he's going to train Anakin.
On another note, I also love R2-D2 and C-3PO's dynamic, just because it's freaking hilarious. XD I just love the way they interact and the way they snark at one another, and how, really, underneath, they really do care about one another. It's just a tremendous joy to watch, really. Also, the relationship between Han, Leia and Luke. I don't know -- it's just a lot of fun to watch. :) And from the CLONE WARS cartoon, the relationship between Anakin and Ahsoka. I know them parting in "To Catch A Jedi" (I haven't watched "The Wrong Jedi" yet because I have a feeling it's going to break my heart. I probably should, though) really got to me. They just had such a close relationship (it might not have started off easy, but it grew close over time), and then it got broken off because Ahsoka was accused of a crime she didn't commit (as well as the events that followed). They kind of remind me of the Doctor and Donna from DOCTOR WHO -- snarky, kind of starting off uneasy at first, but fundamentally, very close -- and eventually, having to part ways. Ahsoka was really Anakin's Donna ***, and I doubt it's a stretch that it really hit hard for both of them to have to be separated. I think a lot of any speculation as to what would happen to Ahsoka is depressing, but yeah...CLONE WARS really hit hard with the depressing part. *Should really get back to rewatching CLONE WARS to see more of them*
So yeah, STAR WARS? Amazing for friendships in general.

* And on another note, considering how Anakin wants to make his Master proud -- another thing that I can relate to. Hell, I think we can relate to that at some point in our lives -- I think that meant a lot to him.
** Especially considering that the very concept of burning alive like that (and the suit) just terrifies me.
*** Hell, in terms of attitude, Ahsoka and Donna are really very similar: sort of the McCoy, not afraid to speak their minds, etc. And Anakin and the Doctor are really quite similar in a few ways; if Russell T. Davies was drawing a bit from STAR WARS during his era of DOCTOR WHO, that wouldn't really surprise me
