Pick a character and I will give and explain the top five ideas/concepts/etc I keep in mind while writing that character that I believe are essential to accurately depicting them. Any and all characters welcome ( including ones I haven't written but might know about...)
If I Make No Sense, I'm Really Sorry -- My Brain Is Just Fried.

He's very protective of the ones he loves. Quite obviously. It's only heightened by the loss of his mother in AOTC -- it's not just having her die in his arms like that (although that's bad enough), but it's also the fact that he feels if he had been quick enough to save her (i.e. if he'd left earlier), it wouldn't have happened. I think it's what drives his behavior in ROTS -- next time, he's not going to be "too late" to save anyone. It especially drives when he shows up at the Chancellor's office in ROTS -- I don't think he would have been there if he hadn't thought he was condemning Padme to death.
2. Despite his bouts of teen angst and other things, he's fundamentally a friendly soul, and has great affection and empathy for other people -- left over from when he was a boy. It shows most in the Expanded Universe, with his interactions with the clone troopers, for example.
Not to mention having a quite wicked sense of humor -- for example, the bridge scene with General Grievous, as well as the meadow picnic scene with Padme, etc. He can also be quite a Deadpan Snarker as well ("Under the circumstances, I'd say the ability to fly [the INVISIBLE HAND] is irrelevant."). He's not as snarky as Obi-Wan (who pretty much makes snark into an artform), but he's pretty good.
3. Despite what some would claim to be arrogance, it's really a mask for his insecurities, i.e. not feeling like he's good enough to be a Jedi. The REVENGE OF THE SITH novelization definitely goes into it, at the very least. It also shows in places such as, say, ATTACK OF THE CLONES, during his breakdown after killing the Sand People (it's not just an "Oh Force, I just nearly wiped out an entire tribe" thing; it's also the fact that he killed out of anger. Where Padme saw someone in more need of compassion than anything else, Anakin no doubt saw the seeds of his fall to the Dark Side, or at least his failure as a Jedi).
4. Despite whatever problems he has with Obi-Wan, he genuinely loves and looks up to him, as when he says, "Obi-Wan is a great mentor -- as wise as Master Yoda and as powerful as Mace Windu" and referring to Obi-Wan as being like a father to him on one occasion. Not to mention the fact that he's saved Obi-Wan's life more than once, as well as saying that the whole INVISIBLE HAND mission was Obi-Wan's idea, and he wouldn't have gotten far without him -- in short, he quite likes Obi-Wan, really. Obi-Wan cares deeply about Anakin too, but he's slightly troubled in terms of showing it.
5. Anakin is actually quite cunning/creative when you really look at it. From commandeering the reek on Geonosis to landing the flaming half of the INVISIBLE HAND, he's not just incredibly brave and determined, but also quite clever and creative. Even after he became Vader and had to be put in the armor, he still managed to adapt to it.
