Oh Jesus, it's so hard to choose. I mean, John Williams is such a great composer. But if I had to pick one, it would probably be Across The Stars:

Not only does it have one of the most beautiful titles ever, but it's just so...complex. You've got the mellow, almost quixotic beginning, the forbidding build-up to the Imperial March in the middle, and then the poignant last chords. The fact it's a theme song for one of my personal favorite pairings -- don't shoot me. XD -- is a definite bonus. :)
