My NOTP for them: Um, Luke/Leia in the romantic sense, I think. That's the closest NOTP I can think of.

My OTF (One True Friendship) for them: Honestly, it's going to be weird that I mention Luke and Leia again, but I do like their sibling relationship.

My OTP for them: Han/Leia. I mean, it was already entertaining in the OT, but TFA really did solidify it, and the way Abrams handled it, in my opinion, was genuinely touching. The bits of frustration, humor, etc.

My second choice pairing for them: Leia/Lando. What can I say; I think they'd be pretty adorable together. The suave ladies man and the princess-turned-general.

My fluffy pairing for them: Han/Leia, OT. You look back on it, and they definitely had some great times together. They really did.

My angsty pairing for them: Han/Leia, TFA. Mostly because of all the shit they both had to endure. I kind of have a headcanon for the both of them being loving but very flawed parents, because I don't think they'd really fit into either SuperParents or LOTF-Levels-Of-Bad Parents. They're definitely a gray shade. In LOTF, I don't really have any kind things to say about them, but in TFA...they really weren't out to fuck up their son's life (unlike with NJO-LOTF, where I think they had a manual for it). A lot of it was Snoke sensing how vulnerable their kid was and exploiting it. I think it is obvious that they loved their son deeply, as Leia did tell Han "There's still light in him", and Han...even when he's talking to Leia prior to that line, he doesn't sound hateful or anything, just really like what happened six years prior just broke him. Even the script basically says he doesn't want to admit that there was "too much Vader" in his son.

So I'd say OT!Han/Leia for the fluff, TFA!Han/Leia for the angst (and it's not just angst, I think; it's definitely giving a lot of texture and compassion that the old Expanded Universe didn't have).

My favorite poly ship for them: Leia/Han/Lando. Because, why not?

My weirdest pairing for them: Can't really think of any.

My NOTP for them: Um, Spock/Nero? Yeah. Let's go with that.

My OTF (One True Friendship) for them: Familial wise, I would say Spock and...all of his family. (In the old timeline, there was supposed to be this half-brother he had who kind of took the Enterprise on an insane quest to reach the center of the galaxy -- long story -- and even though I haven't watched Frontier yet, I think it would be interesting to reincorporate that guy. The half-sibling relationship is interesting)

My OTP for them: Spock/Uhura. Yeah, I know, but seeing the new version for the first time when I was probably a wee fourteen year old, those bits were genuinely sweet.

My second choice pairing for them: Spock/Kirk. Pick a version, any version.

My fluffy pairing for them: Spock/Uhura, Spock/Kirk.

My angsty pairing for them: Spock/Uhura, Spock/Kirk.

My favorite poly ship for them: Spock/Uhura/Kirk.

My NOTP for them: Luke/Leia.

My OTF (One True Friendship) for them: Luke and Han, Luke and Vader. And before he went off the deep end, Luke and Ben Solo.

My OTP for them: And in the familial sense, Luke/Vader. It does have its holes, but it is a genuinely beautiful dynamic.

My second choice pairing for them: Back in the Legendsverse, Luke/Mara. They had some good moments together...well, before it went to shit. Luke/Han isn't bad either; I've read some of the fanfic and it's beautifully done.

My fluffy pairing for them: Luke/Han

My angsty pairing for them: Luke/Han, and from the Legendsverse, Luke/Mara.

My favorite poly ship for them: Unsure.

My weirdest pairing for them: I almost jumped on the Luke/Jyn Orso bandwagon. Almost. Even if they're not Rey's parents, though, the dynamic between them could be interesting. Also, Luke/Rose Tyler.

A do wonder how much we can see between the original characters and the OT-era new movies, but it is interesting to consider. (I know the Han Solo movie is in the works and I'm still not sure how I feel about that.)

I wouldn't have thought of Luke/Rose, but you say it and I'm not opposed to it, I do have my own history with Rose Tyler crossover pairings.

It really is. And as for the Han Solo movie -- I definitely know it will set me up for quite a few feels watching it, really. Just seeing Han on the big screen again. (And if he somehow has a cameo in Episode Eight, even moreso)

I get that. A large enough fandom will certainly ship anything and everything but it means those of us with more basic tastes don't even scratch the surface of weird no matter what our weird ship is.
